Ingredients
1 cup cornmeal
1 cup unbleached all purpose flour
1 Tbs baking powder
1 tsp salt
1 1/2 cups whole milk
1/4 cup honey, plus extra for serving
1/2 cup sugar
4 Tbs butter, melted
1 large egg
1 jalapeño, seeded and minced
1/2 cup cheddar cheese, shredded
Directions
  1. Preheat oven to 400° F. In a large bowl, whisk together cornmeal, flour, baking powder and salt. In a smaller bowl, whisk together milk, honey, sugar, butter and egg to blend. Add milk mixture to dry ingredients; stir until just combined. Do not overmix. Stir in the jalapeño and cheese. 
  2. Grease an 8 x 8 baking dish. Pour batter into dish. Place in oven. Bake until browned around edges and tester inserted into center comes out clean (about 30 minutes). Let cool for 10 minutes before cutting into 2-inch x 4-inch rectangles. Place the pieces on a plate. Brush with vegetable oil or melted butter. 
  3. Place on a hot grill. Cook until grill marks are visible and outside of cornbread is golden and toasted. Grill on all sides for a total of 5 minutes. Serve immediately with butter and honey.
